Peaches are another one of those luscious summer fruits and when you get some good sweet and juicy one’s you don’t need much else, except maybe some sweet almond cream. This recipe celebrates simplicity but tastes anything but simple. The cream is enhanced with almond extract and some lemon zest. The peaches are cooked right on the stovetop so no turning on the oven in this hot weather. You can even grill your peaches for this dish. To serve this dish top with toasted almonds. Let’s get to it.
4 peaches washed and halved
2 tbsp unsalted butter
2 tbsp brown sugar
1/8 tsp almond extract
Pinch of cinnamon
Toasted almonds to garnish, optional
In a large sauté pan melt the butter, and then add the peaches cut side down. Cook for I minute and add just enough water to steam the peaches (a few tablespoons). Cover pan with lid and let the peaches steam and water evaporate some. Add more water and continue to cook until the peaches are tender. Add the brown sugar, cinnamon and almond extract to the pan and move the peaches around to make sure sugar gets on the cut sides of the peaches. You can add a small amount of water if needed. Continue to cook until sugar thickens into a glaze, drizzle the glaze over the back of the peaches and plate.
1 cup heavy cream, cold
2 tbsp powdered sugar
¼ – ½ tsp almond extract
Lemon zest of ¼ – ½ lemon
Whip heavy cream with electric mixer to thicken. Once the heavy cream starts to thicken add the powdered sugar, almond extract and lemon zest.
Serve with peaches.
